Who does not love a good Key Lime Pie? Obviously with the massive sugar content in a traditional pie, it would NOT be a wise choice to indulge in such a dessert. But no worries – there is always a healthy way to provide those traditional treats. This pie is loaded with fresh, organic lime juice and creamy avocados, which means lots of fiber, Vitamin C, trace minerals and healthy fats. This version stayed fresh and green in my refrigerator for several days – no browning at all from the avocados. Serve semi-frozen or simply keep it in the fridge. Bon Appétit!
The Crust:
Turn oven on at 350 F.
Combine the following in a medium size bowl:
1 cup almond flour
½ cup shredded unsweetened organic coconut
3 tablespoons melted butter
½ tsp stevia glyceride
Blend the following and press into a pie dish with your hands.
Bake for about 5 minutes, just as it starts to brown.
Filling:
While the crust is baking, add the following to a food processor:
½ cup freshly squeezed lime juice
Zest of 1 lime
1/2 cup of full fat coconut milk (use the thick fat section in the can)
5 soft, ripe avocados
1 teaspoon liquid stevia glyceride
Pulse and blend until smooth
Once the pie crust has cooled, add the lime filling.
Refrigerate for a few hours before serving. Enjoy!!
