Are you wanting a healthy dessert or snack but don’t have a lot of time to prepare it? This easy blueberry pudding is full of healthy fats, fiber and anti-oxidants. It easily satisfies the craving something ‘sweet” after a meal or you can enjoy it for breakfast. Bon Appétit!
2 cans coconut milk
8 tbsps. Chia seeds
2 cups blueberries – fresh or frozen
Mix all the ingredients in a blender at medium speed.
Pour into a large bowl and let sit for 30 minutes, stirring occasionally.
Refrigerate for 1 hour and then serve.
Top with your favorite nuts.
