Blueberry Cobbler

This blueberry cobbler is amazingly delicious. Enjoy for breakfast or a dessert because it has all the delicious nutrients!

Blueberries are part of my “Super Food” list because of their high anti-oxidants and nutritional value.  Blueberries are high in Vitamin C, K, and Manganese.  Bon Appétit!

Ingredients:

2 cups frozen wild blueberries or fresh wild blueberries 

1.5 tbsp arrowroot powder 

1/2 lemon juiced and 1/2 tsp zest

Mix in a bowl and distribute to a baking dish.

Crust:

1/4 cup coconut flour

1/3 cup almond flour

1-2 tsp stevia powder

3 tbsp ghee or coconut oil, softened but not melted

1 caged free egg

Mix in a mixing bowl and crumble on the top of the blueberry mixture.

Bake at 400 for 20-25 minutes.

Topped with homemade coconut whipped cream:

Using a hand mixer whip one-cup coconut cream with 1/2 tsp stevia liquid. Make sure the coconut cream is cold before mixing. Serve cold whipped cream over warm blueberry cobbler!
