Cardamom Lime Pudding

Cardamom Lime Pudding is a deliciously healthy treat to indulge in at any time of the day. This pudding is especially refreshing on a warm sunny day. It is low in carbs and high in healthy fats from the coconut cream.

Did you know spices have beneficial effects on our body? A lot of them are rich in antioxidants. They also can have antibacterial and anti-fungal effects. Some are even anti-viral! Cardamom specifically is great for the digestion system, antibacterial, and anti-inflammatory.

Ingredients:

3/4 cup unsweetened plant-based milk of choice

3 tbsp arrowroot powder

1 cup coconut cream ( the white part of coconut milk, in full fat, can of coconut milk)

2 tsp stevia glycerite

1 lime juice and zest

1/2-1 tsp cardamom spice

Directions:

Heat over low to medium heat the milk and arrowroot powder until thickens.

Next, add the rest of the ingredients and stir for a few minutes then transfer to a safe container to store in the refrigerator for at least 4 hours.

Topped with homemade graham crackers and lime zest.
