This Cauliflower Alfredo sauce is a perfect alternative to the ‘original dairy alfredo plus with more nutrients and flavor! Cauliflower is part of the cruciferous vegetable family providing great amounts of Vitamin C and other antioxidants; like beta-carotene. Cauliflower is well known for its phytonutrient, glucosinolates; which are sulfur-containing compounds. Glucosinolates have been well studied and are known to support the cardiovascular, digestive, immune, inflammatory, and detoxification systems. Bon Appétit!
Ingredients:
3 tbsp coconut oil or ghee
1 head of cauliflower
4 garlic cloves
1 tsp fish sauce
¾ cup full fat coconut milk
Himalayan sea salt and pepper
Directions:
Boil 1 head of cauliflower +4 garlic gloves for 10 minutes. Drain and place the garlic and cauliflower in the blender with 1 tsp fish sauce,1 tsp sea salt, 1 tsp black pepper, 3/4 cup full-fat coconut milk, 3 tbsp goat ghee (optional) Blend on high and pour over your favorite pasta. I used miracle noodles. Pairs well with a side of wild-caught fish!

What would be a good vegan substitute for fish sauce? I’m uncertain what the flavor is that it adds.
Just leave the fish sauce out of the recipe – no replacement needed!
