As the cooler weather rolls in, there is nothing more satisfying than a warm bowl of soup. If you used to enjoy potato leek soup or the cold French version of that soup, Vichyssoise, but have left the potatoes behind, take heart! Now you can enjoy a very similar flavor with this cauliflower leek soup. Leeks are loaded with Allicin, similar to garlic and onions. They even contain a flavanol that may help reduce your cancer risk and support you on your healing journey. The cauliflower helps to support detoxification of aggressive estrogens. Bon Appetit!
To begin with, chop up 1 large leek and ½ head of cauliflower.
Melt 3 tablespoons of butter in a large soup pan.
Add 3 teaspoons of crushed garlic. Add the leek and cauliflower and sautée for a few minutes.
Add 4 cups of vegetable broth (or broth of your choice)
Simmer for a few minutes until vegetables are still crunchy.
Add 1 cup of chopped kale and stir gently.
Add 1 – 2 Tablespoon of MCT oil. (optional)Â
Pour the soup into a Vita Mix and blend slowly.
Add salt and pepper to taste.
Enjoy hot or cold.

MCT stands for medium chain triglyceride – it refers to the makeup of the oil. It is very similar to coconut oil. Here is a good review on the difference between the two:
