This recipe was one that was created by Maximum Living, a chiropractic organization that promotes healthy living with 5 Essentials. I spoke at the Raleigh Cancer Killer event last week and as always, am so thrilled to be around like-minded doctors and patients. One of the tasty treats that they shared with the audience was a chocolate chia pudding. Chia seeds are high in fiber, protein, trace minerals and Omega 3 fatty acids. This recipe is simple and delicious. Bon Appetit!
2 cans coconut milk (Nature Forest is BPA free)
2 large scoops of chocolate protein powder (use only hormone-free, pasture-raised and low temperature whey)
8 tablespoons of Chia Seeds.
Add coconut milk and protein powder to blender and mix thoroughly on slow speed. Slowly add the chia seeds until well blended.
Pour into a large bowl and let sit for a few minutes, stirring it a few times.
Transfer to refrigerator and cool for at least 1 hour. Â Top with cacao nibs or nuts. Enjoy for breakfast or as a dessert.
