Ingredients:
- 2 cups quinoa
- 1 cup melted dark Lily’s chocolate (or some other sugar-free chocolate)
- 2 tbsp almond butter or cashew butter
- 1/4 cup melted coconut oil
- Sprinkle of sea salt
Directions:
- Start by puffing your quinoa
- Rinse uncooked quinoa thoroughlyÂ
- Spread quinoa on a baking sheet and place in the oven on the lowest temperature to dry with the door open
- Remove once thoroughly dried, around 30 minutes
- In very small batches transfer quinoa onto a pan over medium heat (no oil needed!) and stir continuously until quinoa starts to make a crackling, popping sound
- Once the popping sound starts to die off remove it from heat
- Combine popped quinoa, dark chocolate, nut butter, and coconut oil in a bowl and mix well
- Pour into a loaf tin, freeze for 1 hour
- Cut into bite-size pieces and store in the fridge, enjoy!
