Chocolate Crunch Bar

All ingredients are actually beneficial for your healing journey, and I bet your family won’t notice a difference. They are THAT good!

Ingredients:

  • 2 cups quinoa
  • 1 cup melted dark Lily’s chocolate (or some other sugar-free chocolate)
  • 2 tbsp almond butter or cashew butter
  • 1/4 cup melted coconut oil
  • Sprinkle of sea salt

Directions:

  • Start by puffing your quinoa
    • Rinse uncooked quinoa thoroughly 
    • Spread quinoa on a baking sheet and place in the oven on the lowest temperature to dry with the door open
    • Remove once thoroughly dried, around 30 minutes
    • In very small batches transfer quinoa onto a pan over medium heat (no oil needed!) and stir continuously until quinoa starts to make a crackling, popping sound
    • Once the popping sound starts to die off remove it from heat
  • Combine popped quinoa, dark chocolate, nut butter, and coconut oil in a bowl and mix well
  • Pour into a loaf tin, freeze for 1 hour
  • Cut into bite-size pieces and store in the fridge, enjoy!
