Cruciferous Crunch Salad

At first crunch, you will be hooked on this lavish and delicious cruciferous crunch salad that is overflowing with cancer-fighting ingredients! It is the perfect blend of veggies, seeds, and grapes that will keep you full and energized for hours.

Ingredients:

  • 2 heads broccoli
  • 3 English cucumbers
  • 1-2 cups purple grapes
  • 1 red onion
  • 1 cup GMO-free sunflower seeds (or pumpkin seeds)
  • 2 cups organic, healthy oil, dairy-free ranch (I used Primal Kitchen Ranch with avocado oil)
  • 1 cup balsamic vinegar
  • Garlic salt to taste
  • Pepper to taste

Directions:

  • Dice broccoli heads, English cucumbers, and red onion into fine, bite sizes 
  • Cut grapes into halves 
  • Put cut veggies and grapes in a large mixing bowl
  • Mix vinegar, ranch, salt, and pepper into a separate bowl and adjust to taste (add more ranch if you want creamier, more vinegar if you want more tart)
  • Pour dressing over vegetables and grapes and add sunflower seeds. Mix well and allow to marinate in the refrigerator for about 30 minutes
  • Enjoy!
