Everything BUT Meat Balls

Meatless Balls

These meatless balls are made with nutrient-dense plant-based ingredients. They are not vegan because I added an organic egg, but you may leave out the egg if you choose to go vegan. These balls are a good source of amino acids and phytonutrients. The meatless balls contain vitamins A, C, B, zinc, manganese, healthy fats, fiber, and other essential nutrients.  You can add them to your favorite salad, wrap, or even a grain-free pasta dish.

Ingredients:

1/2 cup chopped raw walnuts (soak for 6 hours, optional)

1/2 cup roasted sunflower seeds

1/2 cup organic chickpeas, rinsed

1/2 cup organic mushrooms, sliced

1/2 tsp salt

2 tbsp homemade pesto

Mix all ingredients in a food processor and pulse until well blended. Place parchment paper on a baking dish. Form balls and place on parchment paper. Bake at 400 degrees for 20-25 minutes.

After the walnut balls are done cooking you can add them to your favorite sauce. I added mine to tomato sauce. And topped it with homemade pesto sauce.

Homemade Pesto Sauce:

3 Packed cups organic spinach

½ cup basil

¼ pumpkin seeds, raw

2 garlic cloves

3-5 tbsp olive oil

2-3 tbsp lemon juice

½ tsp Himalayan salt

Blend together in a small food processor in increments as it may not all fit in at once
