Dr. V’s Favorite Grain Free Banana Blueberry Muffins
These grain free muffins are naturally sweet with NO added sweetener. I used coarse ground almonds from the Vita Mix because of the added nutrition and fiber, but you can also use store bought, blanched almond flour.
Ingredients: Directions:
3 cups almond flour Preheat oven to 350 degrees
¼ teaspoon seas salt Grease or line 12 large muffin tins
2 tsp. baking soda Combine almond flour, baking soda
2 Tbs. coconut oil and salt. In a small bowl, whisk eggs
4 large eggs and coconut oil. Stir into the almond
5 very ripened bananas, mashed flour mixture. Mash the bananas and
1 cup blueberries mix into the batter. Gently stir in
blueberries.
Spoon the batter into muffin cups.
Bake at 350 F for about 35 minutes or until a tooth pick inserted into the center comes out dry.
Cool for 15 minutes and then serve. ENJOY!
The muffin receipe looks great. What is Vita Mix and where can I get it? A former patient in Fayetteville; still with Dr. Madej.
Thanks for all you do.
A Vita Mix is a high powered blender. Just google it. It can do amazing things like raw hot soups, and grind grains and nuts and makes great smoothies, of course. You are welcome. I am happy that I am making a small difference for women like you. :>)
