Some of you might be thinking…. “Tofu? Soy beans?” But may I kindly remind you that soy beans have been a staple of Asian culture for thousands of years. I agree that the mass marketing of GMO soy is not a healthy food. However, NON GMO, organic soy beans and fermented soy can add benefits to your health, if consumed in a moderate and balanced way. In fact, I recently read a study about how the equivalent of 1 cup of soy beans actually reversed the BRCA gene mutation and turned the tumor suppressor gene back on! Enjoy this light “eggless salad” on top of Nori sea weed snacks. Bon Appétit!
Drain 1 firm organic, non GMO block of tofu and pat with hand towel.
Place the block in a medium bowl and mash with a fork.
Place the following into the bowl and mix thoroughly:
1 cup chopped celery
2 chopped green onions
½ cup organic dill pickles, finely chopped
2 tsp. dill
1 tsp. garlic
1 tsp. salt
½ cup grapeseed oil mayo
Place a spoonful of tofu salad unto a square of nori. You can roll it up and enjoy like sushi. Bon Appétit!
