Ingredients:
2 large egg
2/3 cup pureed pumpkin
Stevia to taste
2 cups almond flour
1 1/2 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp nutmeg
1/2 tsp Himalayan sea salt
1/4 tsp baking soda
3 oz (or more) sugar-free dark chocolate (either a bar chopped or chips like Lily’s Chocolate Chips)
Directions:
Preheat oven to 350 degrees
Add the eggs, pureed pumpkin, and stevia to a bowl and mix well
Add the almond flour, spices, and baking soda to a separate bowl and mix well
Fold the dry ingredients into the wet ingredients and stir until combined, fold in the chocolate
Drop cookie dough on a parchment-lined pan in the shape you want them to bake in (cookies are not going to rise or change shape)
As an option add a little chocolate on top
Bake for 10-12 minutes or until baked through
