A study on women with Breast Cancer conducted at the University of Toronto revealed how beneficial ground flax seeds could be. After 30 days of muffins with 5 teaspoons of ground flax seeds, tumor markers were reduced from 30% to 71%. Â That’s pretty impressive. Plant estrogens have a very protective effect on the estrogen receptor sites and also help to lower the levels of circulating estrogens. I try to get in my 5 teaspoons per day and this flax bread is a great way to enjoy it. The rosemary gives it a very earthy taste that goes well with salads and soups. Bon Appetit!
2 cups freshly ground flax seeds
1 cup almond flour
1 teaspoon salt
1 tbsp. baking powder
1 tbsp. dried rosemary (or 2 sprigs of fresh)
Mix these together.
Add the following to the dry mixture after beating for 1 minute:
½ cup water
4 organic eggs
1/3 cup coconut oil
Pour batter into a well-oiled glass bread pan and bake for 20-25 minutes
at 350 F. Â Make sure the center is springy to the touch when done.
Serve warm or cold with pasture-raised butter. Enjoy!
