Ingredients:
- 1 onion minced
- 6 garlic cloves minced
- 1lb grass-fed ground beef
- 1 red bell pepper
- 1 cup tomato sauce (or organic marinara sauce)
- 1/4 cup tomato paste
- 1 tbsp coconut aminos
- 1 tbsp dijon mustard
- 1 tbsp red wine vinegar
- 4 medium sweet potatoes
- 1 tbsp avocado oil
Directions:
For Crockpot:
- Heat coconut oil in a medium pan. Add garlic and onions and cook until aromatic. Add ground beef and cook until completely browned- about 5 minutes. Drain any fat.
- Place beef mixture in a crockpot with remaining ingredients (except sweet potatoes) and stir. Cook on low for 6-7 hours or high for 3-4 hours.
- About an hour before you are ready to eat preheat the oven to 425 degrees
- Place sweet potatoes in the oven for 45 minutes or until tender all the way through
- To serve cut sweet potato open and spoon sloppy Joe mixture on top, garnish with green onions and even a few drops of hot sauce if desired
For Stovetop:
- Heat coconut oil in a medium pan. Add garlic and onions and cook until aromatic. Add ground beef and cook until completely browned- about 5 minutes. Drain any fat.
- Add red bell pepper and cook for a few minutes until tender
- Add in remaining sauce ingredients and stir to combine
- Lower heat and allow to simmer for 45 minutes to an hour
- While simmering preheat the oven to 425 degrees
- Place sweet potatoes in the oven for 45 minutes or until tender all the way through
- To serve cut sweet potato open and spoon sloppy Joe mixture on top, garnish with green onions and even a few drops of hot sauce if desired
