Chia seeds are such interesting little seeds. They have been classified as superfoods because of their high nutritional value. Chia means “strength” in the Mayan language and was used for fuel when warriors would have to go long distances. They are rich in fiber, anti-inflammatory Omega 3 fatty acids and contain a host of vitamins and minerals. Enjoy this easy to make yummy strawberry chia pudding. Serve at breakfast, as a dessert or as a snack. Top with nuts, unsweetened shredded coconut, seeds, fruit, and/or cacao nibs. Bon Appétit!
Ingredients:
1 Can Full-Fat Coconut Milk, BPA Free
2 tbsp Chia Seeds
1 Cup Fresh Organic Strawberries
½ tsp Vanilla Extract
5 drops of stevia or ¼ tsp stevia powder
Directions:
Blend all the ingredients in a high-powered blender. Refrigerate for 2-4 hours before enjoying to get ‘pudding’ like.
