Growing up, I have fond memories of my mother whipping up some cream and blending it with strawberries and lots of sugar. It was one of my favorite desserts as a child. I thought I would try to replicate that taste and texture with a healthier version of this dessert. I must say, it is quite tasty. The coconut milk gives it a rich thick taste while the chia seeds add fiber, omega 3’s and minerals. Add nuts or other fruit to top it off. Bon Appétit!
This recipe makes a big bowl of 8 servings.
In a blender add the following ingredients:
2 cans organic coconut mil
2 cups organic almond milk (unsweetened)
3 cups strawberries
Pour liquid into a large bowl and slowly stir in 2 cups of chia seeds.
Add 1/3 cup Xylitol or sweetener of choice. You can also use Stevia.
Gently mix. Refrigerate and let sit for 1 hour before serving.
Top with nuts or more fruit. Enjoy!
