Thai Green Curry Beef

Thai Green Curry Beef is a delicious meal to make on a Sunday or any day of the week! I love crockpot meals as the slow cooking process enhances flavors and is a healthy cooking method. Spices and healthy fats are the perfect duos. Healthy fats help spices like curry get absorbed into the body so they can be readily available when needed. This slow cooked meal is a good source of anti-inflammatories, omega 3 fatty acids, phytonutrients, and essential vitamins and minerals.

Ingredients:

2 lbs Organic Grass- Fed stew meat (I used skirt steak as it was the only grass-fed available at the time), cut into 1-2 inch pieces

1 Cup Beef Bone Broth

3 tbsp green curry paste

1 tsp curry powder

1 medium onion, chopped

3 garlic cloves, mashed then minced

1 (14 oz)  can organic full fat coconut milk

8 oz green beans

1 lime, juice

Himalayan sea salt

Fresh ground pepper

Directions:

Mix the green curry paste, curry powder, bone broth, and fish sauce in a small mixing bowl. Next place everything in a crockpot EXCEPT for the green beans and coconut milk. Add the bone broth mixture to the crock-pot and mix everything together. Cook on high for 4 hours or low for 8. 1 hour before it is done add in the coconut milk. 30 minutes before you are going to serve, add in the green beans to cook. Serve over miracle noodles. Top with fresh cilantro, jalapenos, and lime juice.

  • How much fish sauce? It’s not listed in the ingredients, but is in the directions! This sounds very yummy!

    • Hi Christine! Fish sauce can be added per taste, it is an optional ingredient if you do not like the taste of it. Enjoy!
