Vanilla Coconut Milk Pudding

I don’t know about you, but I am always looking for simple and quick, yet yummy breakfast or snack ideas. Here is one that I created last week. It is a great source of protein, fiber, Omega 3’s and greens, all in one. The nuts give it a great crunch, which I miss from my breakfast granola days. Get creative and add whatever sounds yummy. If you have not had time to soak the chia seeds in the coconut milk, then use coconut or goat yogurt instead and simply add all the same ingredients. Bon Appetit!

1 can Native Forest unsweetened Coconut Milk (full fat)

2 tablespoons chia seeds

Mix thoroughly and let sit in the refrigerator until congealed – about 1-2 hours.

Add the following to 1/2 cup pudding:

2 teaspoons vanilla protein powder

1 teaspoon of your favorite greens powder

2 tablespoons hemp seeds

2 tablespoons pecans or nuts of your choice

Stir thoroughly and enjoy as a breakfast or snack.
