White Chocolate Coconut Fat Bombs

Healthy fats are essential for optimal health. Plus, they make a delicious snack, especially on a warm summer day. Healthy fats support energy and cell growth. Coconuts are one of the best sources of lauric acid, which is a protective type of fatty acid that makes up 50% of the fatty acids in coconut. Lauric acid can improve cholesterol levels, heart health, and thyroid health. When lauric acid is digested it forms a substance called Monolaurin which can kill harmful pathogens like bacteria, viruses, and fungi.  Bon Appétit!

Ingredients:

1/2 cup cacao butter

1/2 cup coconut oil

1 tbsp vanilla extract 

1 cup of coconut milk cream 

1/4 cup coconut butter

15-20 drops organic stevia 

Freeze Dried Raspberries, unsweetened (optional)

Melt all ingredients except for coconut milk and dried raspberries in a double boiler. Once melted add the coconut milk. Distribute even amounts in mini muffin tins. You can use muffin liners in you don’t have a silicone muffin tin. If you are using dried raspberries sprinkle them on top now. Freeze for about 2 hours or until hard before eating. Keep frozen.
