As our head coach, De’Ann, always says, you don’t have to sacrifice flavor to stay on a healing path. Today, she’s sharing one of her favorite recipes, Chocolate Fruit Bites — a delicious, sugar-free twist on a classic treat.
TruFru candies (those delightful freeze-dried strawberries covered in chocolate) may be tempting, but their high sugar content isn’t ideal for anyone on a breast cancer prevention journey. So, De’Ann created this simple, wholesome alternative that’s equally indulgent but far healthier.
With its rich, chocolatey goodness and nutrient-packed ingredients, this Chocolate Fruit Bites recipe is a perfect guilt-free snack. And here’s a tip straight from De’Ann: double the batch—you’ll want to have plenty of these on hand!
Ingredients:
- 1 package of ripe strawberries
- 1-2 tbsp chia seeds (how much of a crunch do you want?)
- A few drops of stevia if you want sweeter
- 1/2 cup of Lily’s sugar-free chocolate chips
- 1 tbsp coconut oil
- Sprinkle of sea salt
Directions:
- Cut up your strawberries and put into a bowl, mash the strawberries up as much as possible
- Add in chia seeds and stevia and mix
- Line a baking sheet with parchment paper, pour 1/4 cup of the strawberry mixture onto parchment paper to form little patties
- Freeze for 1-2 hours or until frozen
- Once strawberry patties are frozen melt chocolate chips with coconut oil until creamy (you can add more coconut oil if needed for texture)
- Dip strawberry patties into chocolate to completely cover and put back on parchment paper. Sprinkle some sea salt on top
- Put back into the freezer for a few hours, then enjoy!
- TIP: allow to sit out for 5-10 minutes before eating so that the strawberry filling is melted some rather than frozen solid
