This edamame fennel salad is a quick easy dish. It is no surprise now that here in Florida (where I live) things are starting to feel like Summertime, and no better food comes to mind than a delicious cold salad. Organic Edamame is a good source of protein containing essential amino acids, fiber, vitamin K, folate, and other essential vitamins and minerals. Fennel adds a unique flavor and the texture goes well with the rest of the vegetables. Fennel is also great for digestion. Enjoy this Edamame Fennel Salad as a meal or a side dish. Bon Appétit!
Ingredients:
2 cups organic edamame, peeled
1 cup organic fennel, chopped, bulb only
¼ cup fresh parsley, chopped
1 cup organic cherry tomatoes cut in half
1/8 cup red onion, chopped
1 tbsp garlic, minced
1 tsp Himalayan sea salt
1/8 cup olive oil
2 tbsp lemon juice
Pepper and garlic powder to taste
*Feel free to add spices, balsamic vinegar, and or more olive oil for your liking
