I would double this Matcha “Cheesecake” Chia Pudding recipe because you will be shocked by how scrumptious it is and will want to eat more than a cup. It also lasts well in an airtight container in the fridge. Lastly, I only buy matcha from Superfood Science because they provide the highest quality matcha I can find.
Ingredients:
- 1 cup coconut milk (or some other plant milk)
- 2.5 tbsp chia seeds
- 1 scoop vanilla-flavored whey protein (or some other protein powder)
- 1 tsp matcha
- A few drops of stevia to taste
- Lemon zest to top
- A few blueberries or other fruit to top
Directions:
- Mix all ingredients except lemon zest and fruit in a jar
- Add to the refrigerator and chill for at least 1 hour or overnight
- Stir thoroughly, top with zest and fruit, and enjoy!
