Mini Apple Pies

Mini apple pies that are guilt-free!! These little cups are grain-free (of course) and sugar-free (of course). You can enjoy these for dessert or even breakfast. They contain protein, healthy fats, vitamins, and minerals.  Apples are a major source of dietary phytochemicals and possess potent antioxidant activity and anti-proliferative activity in laboratory settings. A study conducted by Cornell University found that apple extracts significantly inhibited Breast Cancer cell growth. These little apple pies are great for the cooler months! Serve warm with homemade coconut whipped cream.

Ingredients:

Piecrust:

2 cups Almond Flour

1 egg organic cage-free

1 tsp baking powder

pinch of salt

1 tbsp coconut oil

1 tsp cinnamon

Preheat oven 350 degrees

Mix all ingredients together. Fill muffin tins with liners. Fill each muffin tin evenly and form a bowl shape for the filling. (About 2 tbsp of crust filling for each) bake for 10 minutes.

Filling:

2 Large Organic Apples, chopped

½ lemon juiced

1 tbsp coconut oil

Mix all ingredients together and fill the crust. Bake for 5-7 minutes until the apples are just softened.

Topped with stevia-sweetened homemade coconut whipped cream.
