Mixed Berry Pie

Everyone loves pie, but if you are on a healing journey or are being very proactive about your health, you want to eliminate the crusts and all the added sugars from a regular baked pie. This is a great alternative that has the natural sweetness from the berries and lightly sweetened with stevia. The crust is made from cassava flour. Cassava is actually a good source of fiber, thiamine, riboflavin, and niacin a few essential B vitamins. This recipe can be served as a dessert or enjoyed for breakfast or a snack. Bon Appétit!

Ingredients:

Crust:

2 Cups Cassava Flour

1.5 tsp Baking Powder

2 large cage free organic eggs

¾ cup ghee or coconut oil softened

10-15 drops of stevia

Filling:

2.5 Cup Frozen or Fresh mixed berries. I used a combination of frozen blueberries, blackberries, and raspberries. (thawed out just enough where there is no frost and a little soft)

1 tbsp tapioca flour or arrowroot starch

Directions:

Preheat oven to 350 degrees. For the crust mix all the ingredients together. In a 5×7 baking dish put half the crust mixture evenly on the bottom use more mix if needed.  Bake for 15 minutes or until lightly browned on the top.

Mix the berries and tapioca flour together. Once the bottom layer is done spread the berries on top. Lastly, crumble the top crust layer on top. Bake for 25 minutes.

Let cool for 10 minutes before cutting. Enjoy with some sugar-free homemade whipped cream or sugar-free coconut cream.

  • This recipe is totally misleading! First the crust doesn’t come out , like in the picture. I’m a baker , and this one doesn’t stick . Comes out like dry sawdust. Second: it’s full of curbs ! 156 carbs just in flour alone ! Do not waste your money ????????????

    • I’m sorry it didn’t turn out well for you, Gina! Perhaps try to grease the pan to help it come out. Cassava flour does a high amount of carbohydrates, but it also contains fiber and B vitamins, making it a better alternative to processed flour. This is a dessert, and not something to indulge in all the time, but a healthier alternative when you are looking for something sweet.
