Raw Matcha Bites with Camu Camu

Did you know Camu Camu Berries contain the most Vitamin C than any other food? 1 tsp of Camu Camu powder contains 682 mg of Vitamin C. Camu Camu powder is a great way to get Vitamin C into your daily juices, smoothies, or even your favorite treats like these Matcha Bites. 

In 2003, the University of Colorado published a report about the potency and concentration of EGCG, a powerful anti-oxidant found in green tea. The researchers found that Matcha green tea contained up to 137 times more EGCG than regular green tea. Matcha can Boost the immune system, suppress inflammation, and can cause breast cancer cells to die.

These delicious treats are packed with protein, healthy fats, fiber, antioxidants, phytonutrients, and other essential nutrients. Just try to not eat them all at once. Bon Appétit!

Ingredients:

1 Cup Raw Cashews, Soaked overnight

2 tsp Matcha Powder

2 tbsp Coconut Flour

1/3 Cup Coconut Cream (this is the solid Cream found in a canned coconut milk (full fat) Organic and BPA-Free)

1 scoop or 2 tbsp Grass- Fed Collagen Powder

1-2 tsp stevia powder

For the Chocolate coating:

2/3 Cup Lilly’s chocolate chips

2 tbsp coconut oil

1 tsp Camu Camu Powder

Directions:

Blend in a food processor or high powder blender the cashews until smooth. Then add the rest of the ingredients until well blended. If you need more liquid add a tbsp more of the coconut cream. The texture should be like cookie dough.

Transfer the Matcha mix into the refrigerator for about 2 hours. This will help make forming the balls and coating in chocolate easier.

About 15 minutes before taking the matcha mix out of the refrigerator make the chocolate coating.

Heat in a double boiler:

2/3 cup Lilly chocolate chips and 2 tbsp coconut oil. Once it is completely melted remove from heat and add the Camu Camu powder.

Remove the mixture from the refrigerator and form ½-1 inch bite size balls. Dip them in the melted chocolate one at a time. Put them back into the refrigerator for about 15-20 minutes so the chocolate hardens. I topped mine with bee pollen.
