Sometimes we just want to really indulge in a “sweet” tasting cookie or cake. The great news is that because of the numerous resources of healthy alternatives, we can enjoy a healthy and nutritious “dessert” on occasion. These cookies are made with almond flour and coconut, with no added sugars. The chocolate chips are from Lily’s Non-GMO brand and are sweetened with Stevia. I have to admit, they are really yummy! Bon Appétit!
Mix the following dry ingredients together:
1/2 to 1 cup chocolate chips
2 ½ cups almond flour
1 cup shredded coconut
¼ cup of Monk Fruit or sweetened to taste with Stevia
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
In a separate bowl, whisk the following:
3 free-range eggs (If you do not want to use eggs, you can use 3 tablespoons ground flax missed in ¼ cup water)
1/3 cup melted coconut oil
1 tsp. almond flavoring
Mix the wet with the dry ingredients.
Wet your hands and make small balls.
Place on a cookie sheet covered with parchment paper.
Press down with a wet fork.
Bake at 350 F for about 10-13 minutes, depending on how crisp you would like them.
Enjoy hot out of the oven or cool in the refrigerator.
