Coconuts are one of the best sources of lauric acid, which is a protective type of fatty acid that makes up 50% of the fatty acids in coconut. Ingredients:
1 cup of organic coconut milk, full fat
1 tbsp chia seeds
1 tbsp flax seeds
1 tbsp hemp seeds
1 tsp cinnamon
1 tsp vanilla extract, optional
1 scoop collagen powder, optional
Splash of stevia glycerite or sweetener of choice
Directions:
Mix all the ingredients (except for collagen if using.) into a small saucepan. Cook over low to medium heat for 5-7 minutes until the mixture becomes thick and oatmeal like. Add the collagen powder now, if using. Top with nuts, nut butter, unsweetened yogurt, coconut cream, and, or berries.
